Thick and creamy Honteri caramel sauce with a wonderful shine, delicious drizzled over ice-cream or a dessert of your choice.

400g Honteri
20g fresh ginger, cut into chunks
30g milk
120g double cream
6g lime
10g ginger puree
0.8g salt
1. Add the Honteri and fresh ginger to the pan and simmer until a golden caramel – this should take approximately 15 minutes.
2. Remove from the heat and remove the fresh ginger pieces. Stir the milk and cream together then pour it into the caramel to stop the cooking. Add the remaining ingredients and stir.
3. To serve, pour over a dessert of your choice.
